Prepare the Rice
In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of white rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

Cook the Asparagus
While the rice is cooking, rinse the asparagus and trim the ends. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus, sprinkle with salt and pepper, and sauté for about 6-8 minutes until tender-crisp. Remove from heat and set aside.

Grill the Salmon
Preheat a grill or grill pan over medium-high heat. Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt, black pepper, and lemon juice. Place the salmon on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Serve
On a plate, serve a portion of white rice, top with grilled salmon, and arrange the sautéed asparagus on the side. Drizzle with additional lemon juice if desired.
