Prepare the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms, zucchini, yellow squash, and onion. Sauté for about 5-7 minutes until the vegetables are tender and the mushrooms are browned.

Add Tomatoes
Stir in the diced tomatoes and cook for an additional 2-3 minutes until the tomatoes are heated through. Season with salt and pepper to taste.

Assemble the Quesadillas
On a tortilla, add a portion of the vegetable mixture. If desired, sprinkle with shredded cheese. Top with another tortilla.

Cook the Quesadillas
In the same skillet, cook the quesadilla over medium heat for 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted.

Serve
Cut the quesadilla into wedges and serve with rice, sour cream, and guacamole salad.
