Prepare the Filling
In a skillet over medium heat, add the shredded carnitas or pastor and warm through for about 5 minutes. Season with salt to taste.

Assemble the Quesadilla
On one half of each tortilla, layer a portion of the warmed pork, followed by a generous amount of shredded cheese. Fold the tortilla over to create a half-moon shape.

Cook the Quesadilla
In the same skillet, add 1 tablespoon of cooking oil. Once hot, place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted. Repeat with remaining quesadillas, adding more oil as necessary.

Serve
Cut each quesadilla into wedges and serve hot with cooked rice, refried beans, sliced jalapeños, and pico de gallo on the side.
