Prepare the Pork
In a bowl, marinate the pork shoulder with adobo sauce and salt. Let it sit for at least 30 minutes, or overnight in the refrigerator for best flavor.

Assemble the Quesadilla
Place a tortilla in a clean skillet over medium heat. On one half of the tortilla, add a layer of shredded pork and top it with monterey jack cheese. Fold the tortilla in half.

Cook the Quesadilla
Cook the quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Serve
Slice the quesadilla into wedges and serve hot with a side of rice, beans, and pico de gallo.
