Prepare the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced onions, bell peppers, zucchini, and squash. Sauté until they are tender, about 5-7 minutes.

Cook the Fish
Remove the fish from the marinade and add to the skillet. Cook for about 3-4 minutes on each side, or until golden brown and cooked through.

Add Tomatoes and Sauce
Add the diced tomatoes and Yucateco sauce to the skillet. Stir gently and let it cook for an additional 2-3 minutes.

Serve
Serve the pescado vallarta over a bed of cooked white rice, topped with sour cream and guacamole salad on the side.
