Prepare the Tamale Dough
In a mixing bowl, combine masa harina, vegetable broth, olive oil, chili powder, cumin, and salt. Mix well until it forms a dough.

Prepare the Filling
In a skillet, heat a tablespoon of olive oil. Sauté chopped bell pepper and zucchini until soft. Add corn and season with salt. Mix well and remove from heat.

Assemble the Tamales
Soak corn husks in warm water for 30 minutes. Take one husk, spread a layer of dough (about 2-3 tablespoons) on the center, add a spoonful of the vegetable filling, and fold the sides. Secure with a strip of husk.

Steam the Tamales
Place tamales upright in a steamer basket. Steam for about 1 hour, or until the masa is firm.

Prepare the Cheese Enchilada
Preheat the oven to 350°F (175°C). In a baking dish, spread a small amount of enchilada sauce at the bottom.

Assemble the Enchiladas
Fill a tortilla with cheddar cheese, roll it up, and place it seam side down in the baking dish. Repeat with remaining tortillas.

Pour enchilada sauce over the rolled tortillas and cover with cheese. Bake for 20-25 minutes until cheese is melted and bubbly.
