Cooking Instructions
- 1
Prepare the Seafood
In a large bowl, combine the fresh fish fillets, scallops, shrimp, and crab meat. Drizzle with olive oil and season with salt and pepper to taste. Let marinate for 15 minutes.
- 2
Sauté Vegetables
In a skillet over medium heat, add a tablespoon of olive oil. Sauté the sliced onions, mushrooms, and banana peppers until soft, about 5-7 minutes. Add diced tomatoes and cook for an additional 2 minutes. Set aside.
- 3
Grill the Seafood
Heat a grill or grill pan over medium-high heat. Grill the marinated seafood for about 3-4 minutes on each side or until cooked through.
- 4
Assemble the Molcajete
In a heated molcajete or sizzling stone dish, layer the sautéed vegetables first, then place the grilled seafood on top. Pour the ranchero sauce over the seafood and sprinkle with melted cheese.
- 5
Serve
Place the molcajete on a wooden board or heatproof surface. Serve immediately with a side of white rice, guacamole salad, sour cream, and warm tortillas.
