Molcajete Recipe

Grilled rib-eye steak, chicken, shrimp, chorizo (mexican sausage), banana peppers, onions, cactus (nopales), and bell peppers on top of melted cheese. All of this coming in a sizzling molcajete. Served with a side of rice, beans, sour cream, guacamole salad and tortillas (Portion for two approximately).

    Prepare the Ingredients

    Slice the rib-eye steak, chicken breast, and chorizo into bite-sized pieces. Marinate with salt, black pepper, and olive oil for at least 30 minutes.

    Grill the Proteins

    Preheat a grill or skillet over medium-high heat. Grill the rib-eye, chicken, shrimp, and chorizo until cooked through (about 5-7 minutes for chicken and rib-eye, 3-5 minutes for shrimp). Remove from heat and set aside.

    Sauté the Vegetables

    In the same skillet, add a bit more olive oil if necessary. Sauté the banana peppers, onions, cactus, and bell peppers until they are tender and slightly charred, about 5-7 minutes.

    Combine and Melt Cheese

    In a molcajete or a cast-iron skillet, combine the grilled proteins and sautéed vegetables. Top with the Mexican cheese and return to the heat until the cheese is melted and bubbling.

    Serve

    Serve the sizzling molcajete immediately with a side of rice, beans, sour cream, guacamole salad, and warm tortillas.
