    Roasting the Tomatillos

    Preheat your oven to 400°F (200°C). Spread the tomatillos and jalapeños on a baking sheet and drizzle with olive oil. Roast in the oven for about 15-20 minutes, or until they are charred and soft.

    Sautéing Aromatics

    While the tomatillos are roasting, heat a skillet over medium heat. Add a tablespoon of olive oil and sauté the onion and minced garlic until they are translucent, about 5 minutes.

    Blending the Sauce

    Once the tomatillos and jalapeños are done roasting, add them to a blender along with the sautéed onion and garlic, cilantro, lime juice, salt, and black pepper. Blend until smooth.

    Adjusting Consistency

    If the sauce is too thick, add a little water to reach your desired consistency. Taste and adjust seasoning as necessary.
