1. Prepare the Rice

Rinse the rice under cold water until the water runs clear. This helps to remove excess starch.

2. Soak the Rice

Combine the rinsed rice, 4 cups of water, and the cinnamon stick in a large bowl. Let it soak for at least 4 hours or overnight for best results.

3. Blend the Mixture

After soaking, remove the cinnamon stick. In a blender, combine the soaked rice and water mixture, and blend until smooth.

4. Strain the Mixture

Strain the blended mixture through a fine mesh sieve or cheesecloth into a pitcher. Discard the solids.

5. Add Flavorings

Stir in the milk, sugar, vanilla extract, and a pinch of salt into the strained liquid. Mix until the sugar is dissolved.

6. Serve

Serve the horchata over ice, and sprinkle with ground cinnamon before serving. Enjoy!
