Prepare the Ingredients
Chop the onion and bell pepper into small pieces.

Cook the Ground Beef
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes. Add the ground beef and cook until browned, breaking it up with a spatula. Drain excess fat if necessary.

Season the Beef
Stir in the taco seasoning, salt, and black pepper. Mix well and cook for another 2-3 minutes until everything is well combined.

Assemble the Quesadillas
Place a tortilla in the skillet over medium heat. Sprinkle half of the shredded cheese on one half of the tortilla. Add a portion of the beef mixture on top of the cheese, then fold the tortilla over to cover the filling.

Cook the Quesadilla
Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve with sour cream and salsa on the side.
