Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

Incorporate Fat
Add the lard or vegetable shortening to the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Add Water
Gradually add the warm water to the mixture, stirring with a fork until the dough comes together. You may need to adjust the amount of water slightly depending on the humidity.

Knead the Dough
Turn the dough out onto a floured surface and knead for about 2-3 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 15 minutes.

Divide and Roll
After resting, divide the dough into three equal pieces. Roll each piece into a ball, then flatten each ball into a disk about 6-8 inches in diameter using a rolling pin.

Cook the Tortillas
Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 1 minute on each side, or until lightly browned and cooked through. Keep tortillas warm in a tortilla warmer or wrapped in a clean kitchen towel.
