Supreme combination consisting of one chicken enchillada, one bean enchillada one cheese enchillada and one beef enchillada. Topped with cheese, lettuce, tomatoes and sour cream.

Prepare the Filling
In a skillet, heat olive oil over medium heat. Add the shredded chicken, refried beans, and cooked ground beef. Season with salt and pepper. Mix well and heat until warmed through.

Assemble the Enchiladas
Preheat oven to 350°F (175°C). Spread a little enchilada sauce on the bottom of a 9x13 inch baking dish. Take a corn tortilla, fill it with a portion of the filling, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas and filling.

Top and Bake
Pour the remaining enchilada sauce over the rolled enchiladas. Sprinkle with shredded cheese on top. Bake in the preheated oven for about 20-25 minutes, until cheese is melted and bubbly.

Serve
Once baked, remove from oven and let cool for a few minutes. Top with shredded lettuce, diced tomatoes, and a dollop of sour cream before serving.
