    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add crab meat, diced tomato, cumin, salt, and pepper. Cook for about 5 minutes until heated through. Remove from heat.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take a corn tortilla, place a portion of the filling on one end, roll it up, and place it seam-side down in a baking dish. Repeat with remaining tortillas and filling.

    Add Cheese Dip

    Pour cheese dip over the enchiladas, ensuring they are well covered. Sprinkle extra shredded cheese on top if desired.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

    Serve hot with sides of rice, sour cream, and guacamole salad.
