Enchilada Filling
Method
Preparation
- 1
Cook the Filling
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat. Add chopped onion and minced garlic, cooking until the onion is translucent. Stir in taco seasoning and refried beans, mixing well. Remove from heat.
- 2
Prepare the Tortillas
In a separate pan, warm the corn tortillas one at a time until they are pliable. This will make them easier to roll.
- 3
Assemble the Enchiladas
Spread a few tablespoons of the filling on each tortilla, sprinkle with cheese, and roll it up tightly. Place seam-side down in a baking dish.
- 4
Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
- 5
Bake
Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.
- 6
Serve
Remove from the oven, let cool for a few minutes, and serve with sour cream and chopped cilantro on top.
