Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion, and sauté until translucent. Add shredded chicken or cooked ground beef (or refried beans for vegetarian) and season with salt and pepper. Mix well and cook until heated through. Remove from heat.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a tortilla, add about 2 tablespoons of the filling in the center, sprinkle some shredded cheese on top, and roll it up. Place seam side down in the baking dish. Repeat this step for all tortillas.

Add Sauce and Cheese
Once all enchiladas are in the baking dish, pour the remaining enchilada sauce over the top, making sure to cover all the enchiladas. Sprinkle the remaining cheese on top.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until cheese is bubbly and golden.

Serve
Remove from the oven and let it cool slightly. Garnish with chopped cilantro if desired. Serve hot.
