    Prepare the Peppers

    Preheat the oven to 375°F (190°C). Cut the poblano peppers in half lengthwise and remove seeds and veins.

    Cook the Filling

    In a skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef, cumin, salt, and black pepper. Cook until the beef is browned and fully cooked.

    Stuff the Peppers

    Remove the skillet from heat and mix in half of the shredded cheddar cheese with the ground beef mixture. Stuff each pepper half with the beef and cheese mixture.

    Bake the Peppers

    Place the stuffed peppers in a baking dish and sprinkle the remaining cheddar cheese on top. Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
