Prepare the Pork
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic, cumin, chili powder, salt, and pepper. Add the pork shoulder, browning it on all sides.

Cook the Pork
Reduce the heat to low, cover, and let the pork cook for about 1.5 to 2 hours, or until tender. Shred the pork using two forks.

Assemble the Burritos
Warm the flour tortillas in a dry skillet. On each tortilla, layer shredded pork, black beans, and a scoop of cooked rice. Add pico de gallo and jalapeño peppers on top.

Wrap the Burritos
Fold the sides of the tortilla over the filling, then roll from the bottom up to form a burrito. Repeat for all tortillas.

Serve
Place the burritos on a plate and drizzle with cheese dip before serving.
