Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add the chopped mushrooms, zucchini, squash, and tomatoes. Season with salt and black pepper. Cook for about 5-7 minutes until the vegetables are tender. Stir in the chopped cilantro and remove from heat.

Fill the Tortillas
Warm the flour tortillas in a dry skillet or microwave until pliable. Place a generous amount of the sautéed vegetable mixture in the center of each tortilla. Sprinkle with shredded cheese.

Roll the Burritos
Fold in the sides of the tortilla and then roll from the bottom up to form a burrito. Ensure the filling is sealed inside.

Prepare the Cheese Dip
In a small saucepan, melt additional cheese with a splash of milk over low heat, stirring until smooth. Pour over the assembled burritos.

Serve the burritos with a side of rice, sour cream, and guacamole salad.
