Black Bean Sope

Method

Preparation

  1. 1

    Prepare the Black Beans

In a saucepan, heat the black beans over medium heat until warmed through. Mash slightly with a fork and season with salt. Set aside.

  2. 2

    Make the Masa Dough

In a mixing bowl, combine the corn masa flour and salt. Gradually add water and mix until a soft dough forms. Divide the dough into 4 equal balls.

  3. 3

    Shape the Sopes

Flatten each ball into a thick disc about 4 inches in diameter. Use your fingers to create a slight raised edge along the perimeter.

  4. 4

    Cook the Sopes

In a skillet, heat the vegetable oil over medium heat. Cook each sope for about 3-4 minutes on each side until lightly golden and cooked through. Drain on paper towels.

  5. 5

    Assemble the Sopes

Top each sope with a generous spoonful of the mashed black beans. Add diced avocado, a sprinkle of cotija cheese, a dollop of sour cream, chopped cilantro, and jalapeño slices. Squeeze fresh lime juice over the top before serving.
