Directions for Preparing Birria Quesadilla

Prepare the Rice and Beans
Cook rice according to package instructions and heat refried beans on the stove until warm. Season with salt to taste.

Assemble the Quesadilla
On one half of each flour tortilla, layer approximately 1/2 cup of shredded birria, followed by 1/2 cup of shredded cheese, a sprinkle of chopped onions, and cilantro. Fold the tortilla over to close.

Cook the Quesadilla
In a skillet, heat 1 tablespoon of vegetable oil or butter over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side or until golden brown and the cheese is melted. Repeat with remaining quesadillas.

Serve
Cut the quesadillas into wedges and serve hot with rice, refried beans, and consome de birria on the side for dipping.
