    Prepare the Chiles

    Remove stems and seeds from the dried guajillo and ancho chiles. Toast them lightly in a dry skillet over medium heat until fragrant, about 2-3 minutes.

    Blend the Sauce

    In a blender, combine the toasted chiles, garlic, cumin, oregano, salt, and 1 cup of beef broth. Blend until smooth.

    Cook the Meat

    In a large pot or Dutch oven, heat a little oil over medium-high heat. Sear the chuck roast on all sides until browned. Remove the meat and set aside.

    Combine Ingredients

    Pour the blended sauce into the pot, add the beef broth, bay leaves, and seared meat. Bring to a boil, then reduce heat to low and cover.

    Simmer

    Allow the birria to simmer for 2-3 hours until the meat is tender and shreds easily.

    Prepare the Accompaniments

    While the birria simmers, prepare rice and beans. Chop cilantro and onions, and slice lime wedges.

    Serve

    Serve the birria hot with tortillas, cheese, cilantro, onions, lime, rice, and beans on the side.
