    Prepare the Beans

    Rinse the pinto beans under cold water, removing any debris or damaged beans. Soak the beans in a large bowl with water for at least 4 hours or overnight for best results.

    Cook the Beans

    In a large pot, heat the olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

    Simmer

    Drain the soaked beans and add them to the pot along with the water, cumin, salt, and pepper. Bring to a boil, then reduce the heat to low and cover. Simmer for 1.5 to 2 hours or until the beans are tender.

    Finish and Serve

    Once the beans are cooked, adjust seasoning to taste. Stir in chopped fresh cilantro before serving.
