Add Vegetables and Broth
Stir in the diced tomatoes, black beans, corn, carrots, bell pepper, cumin, salt, and black pepper. Pour in the vegetable broth and bring the mixture to a boil.

Simmer the Soup
Reduce the heat to low and let the soup simmer for about 20 minutes, or until the vegetables are tender.

Fry the Tortillas
While the soup simmers, heat a small amount of oil in a separate pan over medium heat. Fry the tortilla strips until golden and crispy, then set aside.

Finish the Soup
Once the soup is ready, stir in the cooked rice and let it heat through for an additional 5 minutes.

Ladle the soup into bowls, top with shredded cheese, crispy tortilla strips, and pico de gallo before serving.
