Pasta and Sauce

Method

Cooking Instructions

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

  2. 2

    Prepare the Sauce

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.

  3. 3

    Add Tomatoes and Seasonings

Pour in the crushed tomatoes and bring to a simmer. Add salt, black pepper, and sugar. Let the sauce simmer for about 15 minutes, stirring occasionally.

  4. 4

Combine Basil and Finish the Sauce

Once the sauce has thickened slightly, stir in the torn basil. Cook for an additional 2-3 minutes to let the flavors meld.

  5. 5

    Drain and Combine

When the spaghetti is cooked, reserve about 1 cup of pasta water, then drain the spaghetti. Add the drained spaghetti to the skillet with the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  6. 6

    Serve and Garnish

Plate the spaghetti and top with grated Pecorino cheese, toasted pine nuts, and a drizzle of Saba. Serve immediately.
