Preheat your smoker to 250°F (120°C). Rinse the chicken wings under cold water and pat them dry with paper towels.

In a large bowl, toss the chicken wings with olive oil, salt, and black pepper until evenly coated.

Apply Dry Rub (optional)
If using the dry rub, mix paprika, cayenne pepper, garlic powder, onion powder, brown sugar, salt, and black pepper in a bowl. Rub the mixture generously over the wings.
Smoking the Wings

Smoke the Wings
Place the chicken wings onto the smoker rack, ensuring they are not touching. Smoke for about 1.5 hours or until they reach an internal temperature of 165°F (74°C).
Buffalo Sauce Preparation

Make the Buffalo Sauce
In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the hot sauce, garlic powder, and honey. Stir until well combined and heated through. Remove from heat.
Serving

Coat the Wings
Once the wings are smoked, transfer them to a large bowl. Pour the buffalo sauce over the wings and toss to coat evenly.

Serve the wings hot with your favorite dipping sauce and celery sticks on the side.
