Prepare the Squash
Preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise, scoop out the seeds, and peel the skin. Cut the squash into 1-inch cubes.

Season the Squash
In a large bowl, toss the squash cubes with olive oil, salt, and black pepper until evenly coated.

Roast the Squash
Spread the seasoned squash cubes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are tender and golden brown, flipping halfway through.

Prepare the Toppings
While the squash is roasting, chop the roasted red peppers into bite-sized pieces and set them aside. Crumble the goat cheese and measure out the peanuts.

Assemble the Dish
Once the squash is roasted, remove it from the oven and let it cool slightly. In a serving dish, layer the roasted squash, followed by the chopped roasted red peppers, crumbled goat cheese, and peanuts.

Add the Salsa Macha
Drizzle the salsa macha over the top of the assembled dish to add a spicy kick.

Serve warm as a side dish or main course, garnished with additional peanuts if desired.
