Preparation of Meat

    Start by preheating your smoker to 225°F (107°C).

    In a bowl, mix together the chipotle in adobo, brown sugar, garlic powder, onion powder, smoked paprika, salt, black pepper, and apple cider vinegar to create the marinade.

    Rub the marinade all over the wagyu chuck roast, ensuring it's fully coated. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.

Smoking the Meat

    Place the marinated wagyu chuck roast in the smoker and smoke for approximately 5-7 hours or until it reaches an internal temperature of 195°F (90°C).

    Wrap the roast in foil and let it rest for at least 30 minutes after removing it from the smoker.

Preparation of Slaw

    While the meat is smoking, prepare the slaw by combining shredded cabbage, shredded carrots, and sliced red onion in a large bowl.

    In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and black pepper to make the dressing.

    Pour the dressing over the cabbage mixture and toss until everything is well combined. Refrigerate until ready to serve.

Serving

    Once the meat has rested, shred it using two forks.

    Serve the pulled beef on a platter topped with chipotle BBQ sauce and a side of slaw.
