Croquettes Preparation

    Prepare the Filling

    In a mixing bowl, combine the chopped hot links, mashed potatoes, and shredded white cheddar cheese. Season with salt, black pepper, and cayenne pepper. Mix until well combined.

    Shape the Croquettes

    Using your hands, take a small amount of the filling mixture and shape it into a cylindrical or oval shape. Repeat until all the filling is used up.

    Set Up the Breading Station

    Prepare three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs. Set them up in a row.

    Bread the Croquettes

    Take each shaped croquette, roll it in flour, dip it into the beaten eggs, and then coat it with bread crumbs. Ensure each croquette is fully coated.

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Croquettes

    Carefully add the croquettes to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Flip halfway through cooking.

    Remove the croquettes from the oil and place them on paper towels to drain excess oil. Serve warm with creole mustard aioli on the side.
