Preparation of Bone-in Bacon

    Marinate the Bacon

    In a bowl, mix together the sorghum syrup, apple cider vinegar, olive oil, salt, and black pepper. Add the bone-in bacon pieces, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare your grill for medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

    Grill the Bacon

    Remove the bacon from the marinade, allowing excess to drip off. Place the bacon on the grill and cook for about 5 minutes on each side or until it reaches your desired level of doneness and has a nice char.

Preparation of Pickled Cherry Relish

    In a saucepan, combine the apple cider vinegar, sugar, and salt. Heat over medium heat until the sugar dissolves. Remove from heat and allow to cool slightly.
