Cook the Green Chorizo
In a large skillet over medium heat, add the green chorizo. Cook, breaking it apart with a spatula, until it is browned and cooked through, about 8-10 minutes. Ensure that the chorizo reaches an internal temperature of 160°F (70°C).

Prepare the Cabbage
While the chorizo is cooking, shred the cabbage finely. Place it in a bowl and set aside. Optionally, you can lightly season the cabbage with a pinch of salt and lime juice to enhance its flavor.

Warm the Tortillas
In a separate skillet or on a grill, warm the corn tortillas over medium heat for about 30 seconds on each side, until they are pliable and slightly toasted. Keep them warm by wrapping them in a clean kitchen towel.

Assemble the Tacos
On each warmed tortilla, layer a generous spoonful of the cooked green chorizo, followed by a handful of shredded cabbage, and a sprinkle of cotija cheese. Optionally, add corn salsa and salsa verde for extra flavor.
