    Prepare the Onions

    Peel and slice the onions thinly.

    Cook the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until they are caramelized and golden brown.

    Add Broth and Wine

    Once the onions are caramelized, add the dry white wine to the pot. Stir and let it cook for about 5 minutes. Then, add the beef broth, thyme leaves, and bay leaf to the pot. Bring the mixture to a simmer.

    Season the Soup

    Season the soup with salt and black pepper to taste. Allow it to simmer for an additional 15-20 minutes to let the flavors meld.

    Prepare the Bread

    While the soup is simmering, preheat your oven to 350°F (175°C). Brush the sourdough bread slices with olive oil on both sides and place them on a baking sheet. Bake in the preheated oven for about 10-15 minutes until they are toasted and crispy.

    Remove the bay leaf from the soup. Ladle the hot soup into oven-safe bowls. Top each bowl with 1/2 cup of shredded Swiss cheese and a slice of toasted sourdough bread. Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden brown.
