Cut the Potatoes
Slice the potatoes into even strips, about 1/4 inch thick. Try to keep the size uniform for even cooking.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean kitchen towel. Removing excess moisture is key to achieving crispy fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes
Carefully add a handful of the dried potato strips to the hot oil, being cautious not to overcrowd the pot. Fry in batches until golden brown, about 5-7 minutes.

Drain and Season
Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and pepper to taste.
