    Prepare the wings

    Preheat your smoker to 250°F (120°C). Rinse the chicken wings under cold water and pat them dry with paper towels.

    Season the wings

    In a large bowl, combine olive oil, salt, and black pepper. Add the wings and toss until they are evenly coated.

    Make the dry rub (if using)

    In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, and brown sugar. Rub this mixture over the wings if you choose to use the dry rub.

Smoking the Wings

    Smoke the wings

    Place the chicken wings on the smoker rack. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Buffalo Sauce Preparation

    Make the buffalo sauce

    In a saucepan over medium heat, melt the unsalted butter. Once melted, stir in the hot sauce, garlic powder, and Worcestershire sauce. Bring to a simmer and cook for 5-7 minutes.

Serving

    Toss the wings

    Once the wings are cooked, transfer them to a large bowl. Pour the buffalo sauce over the wings and toss until they are well coated. If using the dry rub, you can serve it on the side.

    Serve the wings hot with celery sticks and blue cheese dressing on the side.
