Soak the Potatoes
Place the curly potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Drain and Dry the Potatoes
After soaking, drain the water and pat the curly fries dry with paper towels to remove excess moisture.

Prepare the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.

Coat the Fries
Toss the dry curly fries in the flour mixture until they are evenly coated. Shake off any excess flour.

Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Fry the Curly Fries
Carefully add a handful of the coated curly fries to the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a plate lined with paper towels to drain.

While the fries are still hot, sprinkle them with BBQ seasoning to taste and toss to combine.

Prepare Horsey Sauce
In a small bowl, mix equal parts mayonnaise and prepared horseradish. Add salt and pepper to taste. Stir until well combined.

Serve the crispy curly fries hot with the homemade horseradish sauce on the side for dipping.
