Desserts

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C). This ensures that the cake bakes evenly.

  2. 2

    Prepare the dry ingredients

In a large bowl, sift together the all-purpose flour, granulated sugar, baking soda, ground cinnamon, and salt. Mix well and set aside.

  3. 3

    Mix the wet ingredients

In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.

  4. 4

    Combine wet and dry ingredients

Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

  5. 5

    Add carrots and nuts

Fold in the grated carrots, chopped walnuts or pecans, and raisins into the batter until evenly distributed.

  6. 6

    Prepare the baking pan

Grease and flour two 9-inch round cake pans to prevent sticking.

  7. 7

    Pour batter into pans

Divide the batter evenly between the two prepared cake pans.

  8. 8

    Bake the cakes

Place the pans in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  9. 9

    Cool the cakes

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely.

  10. 10

    Prepare the cream cheese frosting

In a mixing bowl, beat the cream cheese and softened butter together until smooth. Gradually add the powdered sugar and milk, mixing until well combined and fluffy.

  11. 11

    Frost the cake

Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one cake layer, place the second layer on top, and frost the top and sides of the cake.

  12. 12

    Serve

Slice the carrot cake and serve it on plates. Enjoy your delicious dessert!
