Croutons

Pickled Celery

Method

Croutons

  1. 1

    Prepare the Baguette

Preheat your oven to 375°F (190°C). Cut the French baguette into cubes to make about 4 cups.

  2. 2

    Make Scallion Butter

In a saucepan over medium heat, melt the unsalted butter. Add the finely chopped scallions, garlic powder, salt, and black pepper. Sauté for about 3-4 minutes until scallions are soft.

  3. 3

    Toss with Baguette Cubes

In a large bowl, combine the baguette cubes with the scallion butter mixture, tossing to coat evenly.

  4. 4

    Bake the Croutons

Spread the coated baguette cubes on a baking sheet in a single layer. Bake for 15-20 minutes or until golden brown, turning halfway through.

Anchovy Dressing

  1. 5

    Blend the Dressing

In a blender or food processor, combine the drained anchovy fillets, minced garlic, Dijon mustard, lemon juice, and olive oil. Blend until smooth.

  2. 6

    Add Parmesan and Season

Add the grated Parmesan cheese, salt, and black pepper. Blend again until fully combined and creamy.

Pickled Celery

  1. 7

    Prepare the Pickling Liquid

In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar and salt dissolve.

  2. 8

    Pickle the Celery

Place the chopped celery in a jar or bowl. Pour the hot pickling liquid over the celery, making sure it's fully submerged. Let it cool at room temperature for 30 minutes, then refrigerate for at least 1 hour before serving.
