    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Whisk until well mixed.

    Marinate the Steak

    Place the butcher’s cut beef steaks in a zip-top bag or a shallow dish. Pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or up to overnight.

Cooking the Steak

    Preheat the Grill or Pan

    Preheat your grill or a heavy skillet over medium-high heat. Ensure it’s hot before adding the steak.

    Cook the Steaks

    Remove the steaks from the marinade, allowing the excess to drip off. Place them on the grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

    Rest the Steaks

    Once cooked, transfer the steaks to a plate and cover loosely with foil. Let them rest for 5 minutes before slicing.

    Prepare the Baby Potatoes

    Wash the baby potatoes and place them in a pot of salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and set aside.

    Sauté the Asparagus

    In a skillet, melt the butter over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender but still crisp. Season with salt and pepper to taste.

Serving

    Plate the Dish

    Slice the rested steak against the grain and arrange it on a platter. Serve with sautéed asparagus and baby potatoes on the side.
