Aligot Yukon Potato

    Prepare the Potatoes

    Peel the Yukon Gold potatoes and cut them into evenly sized chunks, about 1-2 inches in size.

    Boil the Potatoes

    Place the potato chunks in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

    Heat the Cream and Butter

    In a small saucepan, combine the heavy cream and unsalted butter. Heat over low heat until the butter is melted and the mixture is hot, but not boiling.

    Mash the Potatoes

    Once the potatoes are cooked, drain them well and return them to the pot. Mash the potatoes using a potato masher or ricer until smooth and creamy.

    Incorporate the Cheese

    Gradually add the hot cream and butter mixture to the mashed potatoes, stirring continuously. Then, fold in the shredded Gruyère cheese until melted and smooth.

    Season the Aligot

    Add salt and black pepper to taste. Stir in the finely chopped chives for added flavor and garnish.

    Transfer the Aligot Yukon Potato to a serving dish and serve immediately, garnished with extra chives if desired.
