Cook edamame

Bring water to a boil

Place 4 cups of water and 1 tablespoon kosher salt in a medium pot and bring to a rolling boil over high heat.

Cook edamame

Add 1 lb frozen edamame (in pods) to the boiling water. Return to a boil, then cook for 4–5 minutes until pods are bright green and tender-crisp. If you prefer very tender, cook an additional 1–2 minutes. Do not overcook.

Drain and cool briefly

Drain the edamame in a colander and immediately run under cold water for 20–30 seconds (or plunge into an ice bath) to stop cooking and preserve color. Drain thoroughly and transfer to a large mixing bowl.

Make spicy garlic sauce

Toast aromatics (optional)

In a small skillet over medium-low heat, warm 1 tablespoon neutral oil. Add the minced garlic (3 cloves) and minced ginger (1 tsp) and sauté 30–45 seconds, stirring constantly, until fragrant and just starting to color. Remove from heat immediately to avoid burning.

Combine sauce ingredients

In a small bowl, whisk together the toasted garlic and ginger with 1 teaspoon gochujang (or sambal), 1 tablespoon soy sauce, 1 teaspoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon honey (or maple syrup), 1 teaspoon crushed red pepper flakes, 1 teaspoon toasted sesame seeds, 1 teaspoon fresh lemon or lime juice (optional), and 1/4 teaspoon freshly ground black pepper until smooth and well combined. Taste and adjust heat/salt/sweetness to preference.

Toss and finish

Pour the warm spicy garlic sauce over the drained warm edamame in the mixing bowl. Toss vigorously with tongs or a spoon for 1–2 minutes so the sauce coats the pods evenly and the heat helps the flavors adhere.

Transfer edamame to a serving bowl. Sprinkle sliced scallions (2 tbsp), an extra pinch of flaky sea salt (if using), and a few additional toasted sesame seeds over the top. Serve warm or at room temperature.

To eat: squeeze each pod between your fingers or teeth to pop the beans out, discarding the pods.
