Method

Prepare the Rainbow Trout

    Marinate the Trout

    In a bowl, combine the olive oil, salt, black pepper, and lemon juice. Add the rainbow trout fillets and coat them well. Let marinate for 15 minutes.

    Preheat the grill to medium-high heat. Grease the grill grates with a little olive oil to prevent sticking.

Cook the Butternut Squash

    Prepare the Squash

    Peel and cube the butternut squash into bite-sized pieces. In a bowl, toss the squash with olive oil, salt, and black pepper.

    Spread the butternut squash on a baking sheet lined with parchment paper. Roast in the oven at 400°F (200°C) for 25-30 minutes until tender and slightly caramelized.

Make the Brown Butter Sauce

    In a pan, melt the unsalted butter over medium heat. Add the sage leaves and cook until the butter turns a golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat and set aside.

Grill the Trout

    Place the marinated trout fillets on the grill. Cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
