    Prepare the Chicken

    Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with a paper towel and season both sides with salt and black pepper.

    Prepare the Vegetables

    Wash the fingerling potatoes and cut them in half lengthwise. Clean the leek by slicing it in half lengthwise and rinsing under cold water to remove dirt. Slice the leek into thin half-moons.

    Mince the Garlic

    Peel and mince the garlic cloves.

Cooking

    Sauté the Leek and Garlic

    In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced leek and minced garlic, sautéing until the leek is soft and translucent, about 5 minutes.

    Add Chicken and Potatoes

    Push the leek and garlic to the side of the skillet. Add the chicken thighs skin-side down to the pan, followed by the fingerling potatoes. Drizzle the remaining tablespoon of olive oil over the potatoes and sprinkle with fresh thyme.

    Sear the Chicken

    Sear the chicken for about 5 minutes until the skin is golden brown. Flip the chicken and cook for an additional 5 minutes.

    Add Olives and Bake

    Add the Castelvetrano olives to the skillet and transfer the entire skillet to the preheated oven. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

    Serve the Dish

    Remove the skillet from the oven and let it rest for a few minutes. Serve the chicken thighs with the sautéed leeks, fingerling potatoes, and olives. Enjoy your Barr Farm Chicken!
