Sugar-cinnamon rim

Spread the granulated sugar and ground cinnamon on a small plate and mix to combine evenly. Moisten the rim of a large Irish coffee glass (or heatproof stemmed glass) by rubbing the lemon or orange twist around the rim or dipping the rim briefly in a little hot coffee. Dip the moistened rim into the sugar-cinnamon mixture, twisting to coat evenly. Set the glass aside.

Layer liqueurs and coffee

Place the prepared glass on a heatproof surface. Pour the coffee liqueur and triple sec into the bottom of the glass. Carefully add the hot coffee, leaving room at the top for the rum and cream. Stir gently to combine the liqueurs and coffee.

Add rum and (optional) flame

Measure 1.5 oz of high-proof rum. If you choose to perform the classic flaming step: warm the rum slightly (do not overheat), carefully float it on top of the coffee by pouring over the back of a spoon. Using a long match or lighter, ignite the rum briefly — the flame will burn off some alcohol and caramelize surface sugars; allow it to burn for 5–10 seconds, then extinguish by covering with a heatproof shaker tin or letting it die down. Exercise extreme caution: keep hair, clothing and flammables away, and do not attempt if unsure. Alternatively, omit the flaming and simply float the rum on top.

Finish with cream and serve

Lightly whip or shake the heavy cream just until it thickens slightly but is still pourable (softly whipped, not stiff). Gently pour the cream over the back of a spoon so it floats on top of the drink, creating a distinct layer. Garnish with the reserved citrus twist laid on the rim or floated on the cream. Serve immediately with a long spoon so the drinker can stir the cream into the coffee as desired.
