Method

Prepare coffee

1

Brew

Brew strong coffee so that the final drink is full-bodied. Use 9 fl oz (about 260 ml) of hot, freshly brewed coffee (preferably drip, French press, or espresso lungo) and pour it into a warmed 12–14 oz heatproof mug or Irish coffee glass.

Assemble drink

2

Add 1.5 oz Baileys Irish Cream to the hot coffee. Stir gently for 5–10 seconds until fully incorporated and the surface becomes slightly glossy.

3

Taste and, if desired, stir in 1 tsp brown or Demerara sugar to sweeten. Stir until dissolved.

Finish & serve

4

Top the coffee with about 2 tbsp whipped cream, spooned gently to float on the surface.

5

Sprinkle ~1 tsp chocolate shavings or a dusting of cocoa powder over the whipped cream for garnish.

6

Serve immediately with a small spoon. Warn guests that the drink is hot and contains alcohol.
