Prep the cardamom
Crush the green cardamom pods lightly with the flat side of a knife or in a mortar and pestle to expose the seeds. Remove and discard the husks if desired, then grind the seeds to a coarse powder using the mortar or finely crush between two spoons.

Dissolve the sugar
To avoid any graininess, place the granulated sugar in a small bowl and add 1 tablespoon of warm water. Stir until the sugar dissolves into a simple syrup. Let it cool for a minute so it isn’t warm when blended with the cold ingredients.

Prepare serving glasses
Chill two tall glasses in the refrigerator for 10–15 minutes or fill them with a few ice cubes briefly and discard before pouring to keep the lassi cold.

Pour and garnish
Divide the blended lassi between the chilled glasses. Sprinkle the chopped pistachios evenly over each serving. Scatter a few saffron threads on top and add a mint sprig to each glass for aroma and color.

Serve immediately
Serve the lassi immediately while frothy and cold. If you need to hold it for a short time, keep it refrigerated and give a quick stir or pulse in the blender before serving.
