Prepare the Marinade
In a bowl, mix together soy sauce, brown sugar, rice vinegar, and sesame oil until the sugar is dissolved. This will be the marinade and glaze.

Marinate the Chicken
Cut the chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Prepare the Skewers
While the chicken is marinating, soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

Skewer the Chicken
Once marinated, thread the chicken pieces onto the soaked skewers, leaving a little space between each piece.

Grill the Yakitori
Preheat your grill or grill pan over medium-high heat. Grill the skewers for about 5-7 minutes per side, basting with the reserved marinade until the chicken is cooked through and has nice grill marks.

Serve
Remove the skewers from the grill, garnish with chopped scallions, and serve with chili peanut sauce on the side for dipping.
