Prepare the Lemongrass
Trim the ends of the lemongrass stalk, then gently bruise it with the back of a knife to release its oils. Cut off a piece that is about 3 inches long to use in the drink.

Prepare the Habanero
Slice the habanero in half and remove the seeds if you prefer a milder heat. If you like it spicy, you can leave the seeds in.
Mixing the Drink

Combine Ingredients
In a cocktail shaker, combine the Mal Bien Zacate mezcal, fresh lime juice, bruised lemongrass, and the halved habanero. Fill the shaker with ice.

Shake the Mixture
Secure the lid on the shaker and shake vigorously for about 15 seconds to chill and mix the ingredients well.

Strain the Cocktail
Strain the mixture into a rocks glass filled with fresh ice, allowing the lemongrass and habanero to remain in the shaker.

Add Amaretto Float
Slowly pour the Lazzaroni Amaretto over the back of a spoon to create a float on top of the cocktail.

Garnish with a lime wedge, a slice of habanero, and a piece of lemongrass for an aromatic finish.
