Method

Pasta Preparation

    Boil Water

    In a large pot, bring 4 liters of water to a rolling boil. Add 2 tablespoons of salt to the boiling water.

    Cook Tagliatelle

    Add 300 grams of tagliatelle to the boiling water. Cook for 7-10 minutes or until al dente, stirring occasionally.

    Drain Pasta

    Once cooked, drain the tagliatelle in a colander and set aside, reserving a cup of pasta water.

Alfredo Sauce Preparation

    Melt Butter

    In a saucepan over medium heat, melt 100 grams of butter.

    Add Cream and Cheese

    Once the butter is melted, stir in 200 ml of heavy cream and let it simmer for 2 minutes. Add 100 grams of grated Parmesan cheese and stir until melted.

    Season the Sauce

    Add 2 teaspoons of minced garlic, 1 teaspoon of black pepper, and 1 teaspoon of nutmeg to the sauce. Stir well and remove from heat.

    Combine with Pasta

    Add the cooked tagliatelle to the Alfredo sauce, tossing to coat. If the sauce is too thick, add reserved pasta water as needed.

Marinara Sauce Preparation

    Sauté Onions and Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped medium onion and sauté until translucent, about 5 minutes. Then, add 3 teaspoons of minced garlic and cook for another minute.

    Add Tomatoes and Seasonings

    Pour in 400 grams of crushed canned tomatoes, 1 tablespoon of fresh chopped basil, 1 teaspoon of dried oregano, and 1 teaspoon of salt. Stir to combine.

    Simmer the Sauce

    Let the marinara sauce simmer for 15-20 minutes, allowing the flavors to meld.

    Combine with Pasta

    Add the cooked tagliatelle to the marinara sauce, tossing to coat evenly.
