Wash and slice the zucchini and yellow squash into half-moons. Dice the red bell pepper and onion. Mince the garlic cloves.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper. Sauté for about 5 minutes until they start to soften.
