Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

  2. 2

    Cook the Pancetta

In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes, stirring occasionally. Remove from heat and leave the pancetta in the skillet.

Sauce Preparation

  1. 3

    Prepare the Egg Mixture

In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

  2. 4

    Combine Spaghetti and Pancetta

Add the drained spaghetti to the skillet with the pancetta. Toss well to combine, ensuring the pasta is coated with the pancetta fat.

  3. 5

    Create the Sauce

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Serving

  1. 6

    Garnish and Serve

Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley, additional black pepper, and extra Parmesan cheese if desired.
